My life feels like it's been going so fast lately. I've been extremely busy at work, and feel like I just don't have enough time for everything when I'm home. Just keeping up with general housekeeping feels like a struggle, much less getting to spend time on my hobbies. I've been behind on my blogging, my knitting, my reading, my cooking. Everything seems to be pushed aside until it's suddenly 9 or 10 at night and I just don't have the energy to start something new. The past few weeks have been especially busy at work, with a few huge projects in the works, but I'm hoping that things will start to calm down this week. Today was still pretty nuts, but it was mostly from playing catch-up instead of working on new projects, so I'm optimistic that things will start looking up.
Feeling overwhelmed like this actually makes me feel really motivated. It reminds me of all the things I wish I had the time to do, and what I want to start making time for. Cooking is one of those things. Making new and different meals is something that I truly love, but it's one of the things that seems to take the backburner when I get really stressed. I opt for super easy dinners (like mac and cheese, veggies and hummus, and tuna melts), instead of trying new recipes with more balanced ingredients and varied tastes. I'm eternally grateful that Joe has been diligently cooking a new Indian curry recipe every week for the past few months. He's working his way through a 660 curries cookbook, and it couldn't be tastier. Plus, it keeps us eating new, nutritious, interesting meals at least once a week. I do make beef and Guinness stew with Irish soda bread each year for St. Patty's Day, so that's something. I'm hoping that my cooking motivation comes back soon, cause I'm excited to try out a few more recipes. Even with all the Indian curries, I'm really excited to make some Thai curry with coconut milk sometime soon! Anyway, I'm looking forward to having a bit more time on my hands, as well as a bit more energy to do all the stuff I've been wanting to do.
